Do you hate throwing out a jar of pickle juice? Do you ever wonder, “I wonder if I could make my own pickles from this leftover juice?” well guess what – YOU CAN! Here’s MY recipe (I’m no chef, but these are darn good!) for what I like to call.. “Upcycled Pickles” I hope you enjoy 🙂
PRINTABLE RECIPE:
You’ll Need:
- pickling cucumbers
- 1 jar “used” pickle juice (any brand)
- 1 tbsp. distilled white vinegar
- 1 tbsp. table or kosher salt
- 1/4 c. fresh dill (or just use stems)
- 2 cloves fresh garlic, smashed; optional
- pinch or two red pepper flakes; optional
Mix together the pickle juice, vinegar, salt and red pepper flakes (if using) in mixing cup. Put half of dill and 1 garlic clove in the bottom of your jar. Layer in slice cucumbers – spears, chunks, coins, just keep them on the thicker side, then top with the rest of the dill and garlic clove. Pour over the pickle brine in your mixing cup and refrigerate for at least one week before eating, or longer if not “pickly” enough after 1 week. Eat within a week or two once they’re ready & enjoy!
If you make a batch of these within the next few days, you can jar them up in a brand new plain mason jar and tie a ribbon around it for a nice gift.. if you know someone who just lovessss pickles!! 😉
