Two-Ingredient Pumpkin Cake +BONUS Ricotta Glaze Recipe!
This cake couldn’t be easier or more versatile to make! You can use a variety of box cake mixes to make it, so you can shop in your own stockpile for this easy dessert! It’s perfect for fall and will impress your guests.. even though it’s what I like to call “stupid easy” lol. 😉 I always make this when I’ve got a lazy sweet tooth!
You can use a container of white or cream cheese frosting, make a glaze (I’ve provided an easy recipe below for the one I made to top mine) or even just top with a big plop of delicious whipped cream to melt all over.. you really can’t go wrong with this one.
*Ingredients & Tube Pan
You’ll Need:
- 1- box cake mix, any brand (yellow, white, vanilla, butter, spice, or carrot flavored mixes all work – just see the *Note if you’re not using spice or carrot cake mix, because you’ll want to add some additional spices to the other mixes to really give it that “pumpkin pie” flavor)
- 1- 14.5oz can pumpkin, or just shy of half a large 30oz. can (like the one in my photo)
- *Note: If using yellow, white, vanilla or butter cake mix, add additional 1/4 tspn. cinnamon, 1/4 tspn. pumpkin pie spice, and 1/8 tsbp. ground ginger (optional); You want the cake to have that warm flavor like a pumpkin pie, which the other cake mixes already have in their mix but these more plain mixes obviously do not.

Let’s Bake!
- Preheat oven to 350 and grease a tube pan or bundt pan.
- Using a hand mixer or stand mixer, beat the pumpkin and cake mix on high for 2 minutes until fluffy.
- Plop into pan (it won’t pour, the batter will be so fluffy it will almost appear spongey as you plop into the pan!) then smooth around the pan to distribute the cake mix evenly.
- Bake 25-30 minutes or until a knife comes out clean.
- Allow to cool completely before frosting or icing.
Quick Ricotta Glaze: (pictured)
1 c. confectioner’s sugar (powdered sugar)
1 tbsp. melted butter
1/4 c. ricotta cheese
1/4 tspb. vanilla extract
1 tbsp. milk, or half & half
Mix together until well combined, then drizzle over cake!
